Makes 12


  • 375g self-raising flour
  • 5g baking powder
  • Pinch of salt
  • 150g sugar
  • 1 egg
  • 300ml NuYu Cashew Milk
  • 90g softened butter
  • 1 grated apple
  • 1 carrot grated
  • 100g dates chopped
  • 60g cashew nuts roughly chopped
  • 1 tsp cinnamon powder

For the topping

  • 40g plain flour
  • 30g unsalted butter, softened
  • 20g brown sugar
  • 50g mixed seeds (poppy, sesame, sunflower, oats and pepitas)


  1. Add the wet ingredients, nuts and dates together in a bowl and set aside
  2. Sift together the dry ingredients then add the butter and combine with your fingers until it resembles large crumbs
  3. Gently fold in the wet mix being careful not to over mix
    Spoon into lined muffin tins and sprinkle with seed topping
  4. Bake at 170°C for 10-15minutes, and test with a skewer in the centre to see if comes out clean

For the topping

  1. Combine all ingredients together in a small bowl until it starts to clump together.
