  • 200g egg whites (about 5)
  • 200g caster sugar
  • 30g cornflour
  • 10ml white vinegar
  • Raspberries, to garnish
  • Strawberries, to garnish
  • Chopped pistachios, to serve


  1. Whip egg whites until stiff peak and then slowly add the sugar
  2. Fold in the cornflour and vinegar then pile onto a lined baking tray into a circle about11/2- 2 inches thick
  3. Place in the oven at 150°C for 20minutes then reduce the temperature to 120°C and bake for 1 hour
  4. Turn the oven off and allow to cool
  5. Spread with pistachio cream and top with fresh raspberries and strawberries and a sprinkle of chopped pistachio nuts
