Pavlova...
Ingredients
200g egg whites (about 5)
200g caster sugar
30g cornflour
10ml white vinegar
Raspberries, to garnish
Strawberries, to garnish
Chopped pistachios, to serve
Method
Whip egg whites until stiff peak and then slowly add the sugar
Fold in the cornflour and vinegar then pile onto a lined baking tray into a circle about11/2- 2 inches thick
Place in the oven at 150°C for 20minutes then reduce the temperature to 120°C and bake for 1 hour
Turn the oven off and allow to cool
Spread with pistachio cream and top with fresh raspberries and strawberries and a sprinkle of chopped pistachio nuts
